Prize Chocolate Cake with Fudge Frosting

Ingredients

1 cup Shortening

2 cup Sugar

5 Egg

4 ounce Unsweetened Baking Chocolate

2 1/2 cup Flour

1/2 tsp Salt

1 tsp Baking Soda

1 cup Buttermilk (or Sour Milk)

2 tsp Vanilla (or more)

1 cup Walnuts (chopped)

3 cup Sugar

2/3 cup Cocoa

1 dash Salt

1 1/2 cup Milk (use whole milk, or add extra butter)

4-6 Tbs Butter

2 tsp Vanilla (or more)


Directions

Cake:
(Top 10 ingredients)
Preheat oven to 350°.
Cream together shortening and 2 c. sugar.
Add eggs one at a time - beating well after each.
Add chocolate. Mix well.
Mix buttermilk and 2 tsp vanilla.
Sift dry ingredients (flour, 1/2 tsp salt, baking soda) together.
Add alternately with milk/vanilla.
Stir in nuts.
Bake in 3 waxed paper lined 9î cake pans or one greased and floured 9 x13î pan.
Bake at 350° for 30 minutes.
Cake is done when a toothpick inserted in the center comes out clean.
(9 x 13î will take 45 minutes or more.)

Fudge Frosting:
Sift 3 cup sugar, cocoa and dash of salt to eliminate lumps.
Heat milk and add sugar/cocoa mixture. Bring to gentle boil.
Cover until lid threatens to pop off.
Remove lid and turn heat down to gentle boil.
Boil until soft ball stage.
Donít stir often, only as necessary.
Add butter while hot.
Cool until you can touch bottom of pan.
Add 2 teaspoons vanilla and beat vigorously until fudge holds its shape.
Frost the cake quickly before the fudge sets.
