Fiesta Casserole

Ingredients

Fiesta Casserole

1 pound Ground Beef (or Ground Turkey)

1 Green Pepper (chopped)

1 Red Pepper (chopped)

16 ounce Salsa (chunky)

14 1/2 ounce Diced Tomatoes (un-drained)

10 ounce Corn (frozen)

12 Tortilla Shell (6 inch)

1 1/2 cup Cheddar Cheese (shredded)

Taco Seasoning (to taste)


Directions

Pre-heat oven to 375°.
Brown meat with peppers and onions in large skillet.
Drain and return to skillet.
Add salsa, tomatoes and corn and bring to a boil.
Sprinkle top with Chipotle or Taco seasoning.
Put 1 cup meat mixture in bottom of 9 x 13î baking dish.
Top with 6 tortillas, overlapping as necessary.
Spoon half of the remaining meat mixture over tortillas.
Top with 3/4 cup of cheddar cheese.
Top with remaining 6 tortillas and remaining meat mixture.
Cover and bake at 375° 25-30 minutes or until heated through.
Remove from oven and uncover.
Sprinkle with remaining 3/4 cup cheddar cheese.
Cover and let stand 5 minutes or until cheese is melted.
Serve with sour cream on the side.

Note:
This can be assembled ahead of time and refrigerated up to 24 hours. When ready to serve, bake, covered, at 375 degrees for 40-45 minutes.
