Broccoli Slaw

Ingredients

Broccoli Slaw

1 package Broccoli Slaw

1 cup Sunflower Seeds (kernels)

2 package Ramen Noodles (Oriental Flavor)

1 cup Almonds (slivered)

1 cup Green Onions (chopped)

1/3 cup Rice Vinegar

1/2 cup Sugar

3/4 cup Salad Oil


Directions

Place almonds on a platter in the microwave.
Microwave on high power for 3 minutes.
Stir and microwave 2 more minutes on high.
Cool.

Break up the Ramen noodles: gently pound the unopened bag with a meat tenderizer.
Open the bag and remove the seasoning packet.
Mix seasoning packets, rice vinegar, sugar, and salad oil together; refrigerate for 1 hour or longer.
In a large salad bowl, combine the broccoli slaw mix, sunflower seeds kernels, uncooked ramen noodles, slivered almonds and green onions.
Add dressing to salad mixture.
Gently toss to mix salad thoroughly.
Refrigerate for 20-30 minutes before serving.

This is a great salad to take to pot lucks, or to make when grilling out in the summer. I always get compliments. Good, unexpected flavor. The main downfall is that it is hard to scale down for a small dinner if you are craving it.

This is also very easy to make up ahead of time. I usually put the toasted almonds, sunflower seed kernels and the broken ramen noodles in one ziplock bag and the chopped green onions in another. When you are ready to eat, dump everything in one bowl, add the dressing and you are ready to eat.
