Chicken Nuggets

Ingredients
2-3 pound Chicken (breast meat)
1/2 cup Breadcrumbs (I like Italian)
1/2 cup Parmesan Cheese (grated)
1 tsp Oregano
1/8 tsp Pepper
1 tsp Salt
2 Egg
3/4 cup Vegetable Oil
1 cup White Wine (optional)
Directions
Cut raw chicken into nuggets; Pat dry.
Combine breadcrumbs, parmesan cheese, oregano, pepper and salt; Set aside.
Beat eggs in a shallow dish.
Dip chicken into egg, then breadcrumb mixture, coating the entire nugget.
Heat oil in a large fry pan (medium-high heat).
SautÈ chicken nuggets until golden brown, about 3 minutes a side. Remove to a warm platter.
Serve with sweet and sour sauce, barbeque sauce, honey mustard or ranch dressing.
Optional Sauce:
When all nuggets have been cooked, remove remaining oil from fry pan.
Stir in white wine scrapping up brown residue.
Boil to slightly reduce.
Pour sauce over nuggets.

Delicious recipe. Adds a note of elegance to the typical chicken nugget. Fun for kids and adults alike!
I have made this with both freshly shredded and processed powder Parmesan cheese. Both are equally good. Of course, if I have it in the house, I prefer the real stuff.
I have never tried the optional white wine reduction. But I'd be excited to hear what people think of it...
