Ingredients

Hot and Sweet Italian Sausages in Tomato Sauce

1/2 pound Sausage (HOT; removed from casings and crumbled)

1/2 pound Sausage (SWEET; removed from casings and crumbled)

1 1/2 cup Red Onion (sliced)

1 1/2 Tbs Garlic (minced)

3/4 tsp Fennel Seed

1/2 tsp Salt

1/2 tsp Red Pepper Flakes

28 ounce Whole Peeled Tomatoes (crushed by hand, with their juice)

2 Tbs Tomato Paste

1 Tbs Oregano (fresh; chopped)

1 pound Pasta (penne, ziti, or mostaccioli)

1 1/2 cup Ricotta Cheese

6 Tbs Basil (fresh; chopped)

Parmesan Cheese (for garnish)


Directions

In a large sautee pan or pot, cook sausage over medium-high heat until the fat is rendered and the sausages start to brown, about 5 minutes.
Remove with slotted spoon and drain on paper towels.
Remove all but 2 Tbs of fat from the pan.
To the fat remaining in the pan, add the onions and garlic and cook over medium-high heat until soft; about 3 minutes.
Add fennel seeds, salt, and red pepper flakes; cook, stirring, until fragrant, about 20-30 seconds.
Add tomatoes and their juice, tomato paste, oregano, cooked sausage.
Cook, stirring, until thick and fragrant, 20-25 minutes.
Meanwhile, in a pot of salted water, cook pasta until al dente (according to package directions).
Drain pasta.
Remove sauce from heat and adjust seasoning to taste.
Toss pasta in pot with the sauce.
Stir in ricotta and basil.
Garnish with Parmesan cheese when serving.
