Mini Zucchini Quiche (WW)

Ingredients

Cooking Spray

2 Zucchini (small; finely chopped)

1 Onion (finely chopped)

1 cup Parmesan Cheese (shredded)

6 Egg

1/2 cup Flour

1/4 cup Basil (finely chopped)

3 Tbs Olive Oil

2 tsp Baking Powder

1 tsp Sugar

1 tsp Salt

1/2 tsp Pepper


Directions

Preheat oven to 375.
Coat 2 24-hole non-stick mini muffin pans with cooking spray.
Combine all ingredients in a large bowl.
Spoon about 1 heaping Tbs of egg mixture into each prepared hole, making sure to stir mixture after filling each one.
Bake until bottoms are golden brown and quiche are cooked through, about 15 minutes.
Remove pan(s) from oven and let quiche cool for a few minutes in the pan.
Remove quiche to a wire rack to cool more.


Katie Dishes - So-So

These were not bad, per se. But I remember them just being a little bland and simple. The texture was great, so I'd recommend just adjusting seasing. Maybe add more salt, some garlic, dry mustard...whatever suits your fancy.
