Potato Pancakes (WW)

Ingredients

1 1/4 pound Potatoes (peeled and shredded)

2 Egg Whites

3 Tbs Flour

2 Green Onions (minced)

3/4 tsp Salt

4 tsp Vegetable Oil


Directions

Soak the potatoes in cold water for 30 minutes.
Drain and blot dry.
Preheat oven to 375.

In a medium bowl, combine the potatoes, egg whites, flour, green onions, and salt.
Form into 12 pancakes.
In a large non-stick skillet over medium heat, heat 1/3 of the oil.
Cook 4 pancakes at a time, until just golden (about 2 minutes) on each side.
Transfer to baking sheet.
Repeat with remaining oil and pancakes.
Bake at 375 until crisp and cooked through, about 5-7 more minutes.

Definitely a good potato alterative to the standard baked and mashed. These are very good. Nothing I day dream about, but a good side dish to any meal.
