German Potato Salad

Ingredients

3-4 pound Potatoes (red)

1/4 pound Bacon

1/2 cup Sugar

1 Egg

~ 1/2 cup Vinegar


Directions

Clean and boil potatoes until fork tender.
Remove potato skins.
Cut potatoes into bite-sized pieces.
Cut bacon into little pieces.
Fry until browned.
Drain bacon pieces on paper toweling; leave grease in the pan.
Beat egg.
Pour beated egg into a 1 cup measuring cup; egg will not fill the full cup.
Add vinegar to the egg, filling the measuring cup for a total of 1 cup of egg/vinegar.
Add sugar and egg/vinegar mixture to bacon grease.
Cook until thickened.
Add bacon pieces.
Pour over hot potatoes.
