Clothespin Cookies

Ingredients

1 1/2 cup Margarine

2 cup Flour

1 Egg Yolks

1 cup Sour Cream

1/2 cup Shortening

1/2 cup Milk (hot)

1 cup Sugar

1 Egg Whites

2 tsp Vanilla


Directions

Cookies:
Mix 1 cup margarine, flour, egg yolk, and sour cream thoroughly and chill dough overnight.
Preheat oven to 400°.
Roll dough out onto lightly floured board.
Cut into 3/4 x 6 inch strips with a pizza cutter.
Wrap strips around seasoned clothespins*.
Bake on an ungreased baking sheet at 400° for 15 - 20 minutes or until golden brown.

Filling:
Mix together hot milk, 1/2 cup margarine, shortening and sugar.
Add egg white and vanilla.
Continue mixing until filling resembles whipped cream (this will take some patience).
With a pastry bag (or zip lock with the corner cut off), fill cookies with filling.
Sprinkle filled cookies with powdered sugar.
Keep cookies refrigerated.
Take out just before you are ready to serve.

*How to Season Clothespins:
Use round clothespins.
Grease with solid shortening (Crisco).
Bake for 10 minutes at 350 degrees.
Cool before using.

These are excellent! They are kind of a pill to make, and I only bother making them once a year, but they are so worth it when I do. The cookies are perfectly light and crispy. And the filling is airy and subtle and not overpowering. They really are the perfect sweet treat in my opinion.

My husband likes to say they are like a poor man's cannoli. I'm not sure I agree with him regarding anything other than the look. The cookie isn't fried and heavy like a cannoli, nor is the filling as thick. But he does devour them like cannolis! :)
