Lemon Bars

Ingredients

1 cup Butter

1/2 cup Powdered Sugar (+ some reserved to sprinkle on top)

2 cup Flour (+ 4 Tbs)

4 Egg

2 cup Sugar

1 tsp Salt

10 Tbs Lemon Juice

1 tsp Baking Powder


Directions

Preheat oven to 350°.
Mix butter, powdered sugar, and 2 cups flour thoroughly.
Press into an ungreased 9 x 13 inch pan.
Bake at 350° for 25 minutes or until golden brown.
Remove from oven; set aside.

Beat eggs with a fork or mixer.
Add remaining ingredients (4 Tbs flour, sugar, salt, lemon juice, and baking powder) and mix thoroughly.
Pour on top of hot crust.
Return to oven and bake at 350° for an additional 30 minutes, or until the lemon is set.
Sprinkle the top with powdered sugar while still warm.

This is one of my favorite desserts. Its a little tricky to get the lemon set just right, but it is just the perfect hint of lemon!
