Carrot Bars with Cream Cheese Frosting

Ingredients

1 1/2 cup Flour

1/2 cup Walnuts (chopped)

1/2 tsp Baking Powder

1/2 tsp Cinnamon

3/4 cup Vegetable Oil

1/2 cup Brown Sugar

2 Egg

2 cup Carrots (sliced)

8 ounce Cream Cheese

2 Tbs Butter (room temperature)

1 cup Powdered Sugar

2 Tbs Orange Juice

1/2 cup Coconut (toasted)


Directions

Bars:
Preheat oven to 350°.
Grease a 9 x 13 inch pan.
Mix flour, walnuts, baking powder and cinnamon.
In a food processor or blender, process oil, brown sugar and eggs.
Add carrots and process until finely chopped.
Pour over flour mixture and stir until well blended.
Spread in greased 9 x 13 inch pan.
Bake at 350° for 35 minutes, or until edges pull away from the side of pan and toothpick inserted in the center comes out clean.
Cool in the pan.

Frosting:
Beat cream cheese and butter until blended.
Beat in powdered sugar and orange juice until light and smooth.
Spread frosting over baked bars.
Sprinkle with toasted coconut.
Let stand 1 hour before cutting.


Katie Dishes - So - So

I don't dislike these when they turn out ok, but I have faced some challenges in getting them to turn out. Sometimes they are too cakey at the end, sometimes they are too dry, sometimes they are too wet. I can't get them to turn out consistent.

And the frosting turns out about the same. It often ends up way too liquidy, so I add some powdered sugar. But then it turns out too sweet. Its a no-win situation.

Good luck. If you find a way to make these work consistenly, let me know. But after trying numerous times, I decided I'll just make a carrot cake when I have the craving rather than short cutting it...
