Parsley and Lemon Crumb-Coated Cod (WW)
Adapted From: Weight Watchers


Ingredients

1 slice Bread

1/4 cup Parsley (fresh; chopped)

1 tsp Lemon Zest

1 1/4 pound Cod Fillets (four 5 oz pieces)

1 1/2 Tbs Lemon Juice

1/2 tsp Salt

1/4 tsp Pepper


Directions

Preheat oven to broil.
Pulse bread, parsely, and zest in a food processor until fine crumbs are formed.
Place fish in a small pan.
Drizzle with lemon juice.
Sprinkle with salt and pepper.
Pat with breadcrumbs.
Broili fish until cooked through and opaque, about 10 minutes.


Katie Dishes - So-So

I was not incredibly impressed with this. I do make every now and again when I'm in the mood for healthy fish. But overall, it is a little under-whelming.
