Lightly Lemon Chicken

Ingredients

3/4 cup Breadcrumbs

1 Tbs Parsley

2 breast Chicken

1 Egg

1 clove Garlic

3 Tbs Margarine

1 Lemon

1/4 cup Chicken Broth


Directions

Place chicken breasts between two pieces of plastic wrap and pound to 1/4" think; remove plastic wrap.
Mix breadcrumbs and parsley; set aside.
Beat egg; set aside.
Dip chicken into egg and then dredge in crumbs.
In skillet over medium high heat, cook garlic in margarine for 1 minute.
Add chicken and brown on both sides.
Cut lemon in half.
Slice half of lemon and arrange over chicken.
Squeeze juice from the other half of lemon into the chicken broth.
Add chicken broth/lemon mixture to pan.
Heat to boiling.
Reduce heat; cover and simmar about 10 minutes

This isn't a recipe I make very often, but every time I make it I am reminded how good it is. It is a little tedious to make, and can end up soggy if you don't have a wide enough pan. The broth and juice shouldn't completely cover the chicken.

Definitely worth trying. Hasn't made it into my weekly recipe rotation, but it is very good!
