Veggie Chicken Salad (WW)
Adapted From: Weight Watchers


Ingredients

2 cup Broccoli (chopped)

2 cup Cauliflower (chopped)

1 Red Pepper (diced)

6 ounce Chicken (cooked and chopped)

1 cup Cherry Tomatoes (halved)

1/2 cup Ranch Dressing (fat free)

1 cup Cheddar Cheese (fat free; shredded)

1/4 cup Bacon Bits (imitation)


Directions

Combine chicken and vegetables in a bowl.
Add dressing and toss well.
Add cheese and bacon bits.
Cover and refrigerate for several hours before serving


Katie Dishes - So-So

This recipe is super easy, and a healthy option for a packed lunch. It works well served open face on an english muffin. Not bad. But the flavors didn't overwhelm me. I honestly haven't made it since. Not because it is bad, just nothing to write home about.
