Turkey Chili (WW)
Adapted From: Weight Watchers


Ingredients

Turkey Chili (WW)

1 tsp Canola Oil

1 Onion (large)

2 clove Garlic (minced)

1 Carrots (or about 1 cup)

1 pound Ground Turkey (or Beef)

2 Tbs Chili Powder

1 Tbs Paprika

1 tsp Cumin

1 1/2 tsp Red Pepper Flakes

2 Tomatoes (medium)

1 cup Tomato Sauce

1 1/2 Tbs Apple Cider Vinegar

1 cup Chicken Broth (fat free)

1 1/2 cup Kidney Beans

1 Green Pepper (medium)

1/2 tsp Salt

1/8 tsp Pepper


Directions

Heat a large pot coated with cooking spray over medium heat.
Add oil and onion; saute until soft.
Add garlic and carrots and cook until garlic is softened.
Add ground turkey and stir to break up lumps for about 5 minutes until the meat is browned.
Add chili powder, paprika, cumin, red pepper flakes, tomatoes, tomato sauce, vinegar and broth.
Bring to boil, then reduce heat.
Cover and simmer until meat is tender, 30-45 minutes.
Add beans and peppers.
Simmer uncovered until peppers are done, about 10 minutes.
Season to taste with salt and pepper.

I am not really a chili fan in general. (I appologize to everyone out there moaning right now.) But, since I am a good wife and my husband loves chili, I do try to find some good options. This is not only a healthy option, but it also comes out with bold and spicy flavors, just the way he likes it.

There is a huge debate out there about if noodles belong in chili. Me, not a fan. My husband, on the other hand, loves his noodles. When I'm feeling up to pleasing him, I add about 1 cup of macaroni noodles just after reducing the heat to a simmer. If you want to try this, here are some tips:
- You may need to add extra chicken broth to compensate for the noodles soaking up all the liquid.
- Taste it to check seasoning, since the extra liquid will water down the flavor; add whatever you feel it needs.
- When refridgerating or freezing leftovers, add even more broth. The noodles soad up more ane more liquid the longer they sit in it. If you don't do this, the next day it will be more of a stew than a soup!

I typically serve with shredded cheese, sour cream, and raw onions. YUM!
