Mandarin Orange Salad

Ingredients

Mandarin Orange Salad

1/2 cup Almonds (slivered)

2 Tbs Sugar

1/2 head Iceberg Lettuce (torn into bite-size pieces)

1/2 head Romaine Lettuce (torn into bite-size pieces)

2 stalk Celery (chopped)

3 Green Onions (sliced - including tops)

1 can Mandarin Oranges (drained)

1/3 cup Salad Oil

3 Tbs Vinegar (rice)

3 Tbs Sugar

1 Tbs Parsley

1/2 tsp Salt

1 dash Pepper

Tabasco (2-3 drops)


Directions

Place almonds and sugar in a small saucepan over medium heat.
Stir until sugar melts and turns golden brown and coats almonds. (Watch this closely, as it can quickly go from melted to burned!)
Remove immediately and spread onto a lightly greased cookie sheet to cool.

Dressing:
Mix vinegar, oil, sugar, parsley, pepper, salt and Tabasco a jar with a tight fitting lid and shake well.
Refrigerate until ready to serve.

Salad:
Mix lettuce together with celery and onions.
Add mandarin oranges and caramelized almonds.
Pour dressing over the top of the salad and toss gently.
Serve immediately.

This is my absolute favorite salad! The oranges add just the right amount of sweetness. The green onions are perfectly subtle. But my favorite part: the sugared almonds. YUM.

Trust me when I say that even if this doesn't sound good to you, you should consider trying it on a night you have company. You might be suprised! I have had many guests admit to thinking it didn't sound like something they would like; but they tried a small serving just to be polite...and ended up getting seconds it was so good.

Confession: I have added the slivered almonds from this recipe to other salads to add the perfect sweet crunch.
