Stuffed Shells

Ingredients

Stuffed Shells

12 ounce Jumbo Shells

4 cup Cottage Cheese

2 cup Mozzarella Cheese (shredded)

3/4 cup Parmesan Cheese (shredded)

3 Egg

1 Tbs Parsley

3/4 tsp Oregano

1/2 tsp Salt

1/4 tsp Pepper

32 ounce Spaghetti Sauce


Directions

Preheat oven to 350°.
Cook shells according to package directions; drain.
Combine cheeses, eggs and seasonings.
Fill each shell with about 2 Tablespoons cheese mixture.
Spread thin layer of spaghetti sauce on bottom of 9 x 13î pan.
Place filled shells open side up in a single layer in pan.
Cover with remaining sauce.
Cover pan with aluminum foil.
Bake at 350° for 35 minutes.

Italian food isn't at the top of my list for dinner most nights, but these shells are exceptional. And to top it off, its suprisingly easy! Serve it up with some homemade garlic bread, and you've got an excellent meal.

This is also a great option for when you have guests. And not only does it look pretty impressive finished, but you can make it up in advance, leaving you more time to socialize (aka - drink) with your guests!

Alternatives:
1. My husband thinks that a meal isn't a meal without meat. So I adapt this a bit by adding ground italian sausage into the stuffing when we make it at home. It is excellent, and a nice change from the normal beef and chicken.
2. I like to add some extra mozzerella on the top so it is nice and melted when serving.
