Soft Caramels
Adapted From: Great Aunt Annabelle


Ingredients

1 cup Butter

1 pound Brown Sugar (2 1/4 cups)

1 dash Salt

1 cup Light Corn Syrup

15 ounce Sweetened Condensed Milk

1 tsp Vanilla

2 ounce Unsweetened Baking Chocolate (optional)


Directions

Melt butter in a heavy 3 quart sauce pan. Add sugar and salt and mix thoroughly.
Stir in corn syrup. Mix well.
Gradually add milk, stirring constantly.
Cook and stir over medium heat to firm ball stage (245°); about 12ñ15 minutes.
Remove from heat.
Stir in vanilla.
Pour into buttered 9 inch square pan.
Cool and cut into squares.
Caramels can be rolled and wrapped in saran wrap individually.

For Chocolate caramels:
Add 2 (1 ounce) squares unsweetened chocolate at the same time as the milk.
