Bacon & Egg Breakfast Cups (WW)

Ingredients

Cooking Spray

12 slice Canadian Bacon

12 Egg

Salt

Pepper

2 Tbs Parmesan Cheese

.75 Grape Tomatoes (chopped)

1 Tbs Chives (chopped)


Directions

  • Preheat oven to 400 F.  Coat a 12 cup muffin pan with cooking spray.
  • Arrange 1 bacon slice in each muffin cup; if slices want to pop up, make a cut from the edge to the center and fit them down into the pay (they don't need to be perfect).
  • Crack 1 egg into each muffin cup; sprinkle eggs evening with salt and black pepper.  Sprinkle cheese evening over the eggs.  The sprinkle the the tomatoes evenly over the top.
  • Bake until the eggs are set to your liking, about 15-20 minutes.  
  • Garnish with chives evenly over the top.
